Drive up to the very top of Mount Pinos to escape the summer heat and have a great hike (~2-3 miles) for stupendous views of the San Joaquin Valley, Lockwood Valley, and other valleys. Also, can go up at night for star gazing - this is where many astronomers go.
During snow season, you do need to purchase a parking pass. Lots of people go cross-country skiing up there.
Also mountain biking.
