The history of a place is written in it's bricks it's food.
Cork is rather old mercantile city, part of, yet not quite defined by the greater part of the collective national history yet greatly distinct. It has it's particular 'vibe' a depth, history which a visitor wouldn't immediately understand. Starting at the Grand Parade, a short tour of the famous English Market where we will pick up ingredients we need and if possible encounter some producers, I will explain the means of how this small city became a considerable entity.
Along the way I will point out what this trade paid for and how it set the city apart.
Then back in my kitchen we get cracking on preparation of 3-4 recipes adapted from traditional Irish dishes (notes provided)
which we get to enjoy in my courtyard overlooked by the 13thC Abbey tower. (it's Ireland- weather permitting!)
A tasting of artisan cheeses drawn from the local area.
Wine included local, when available and this isn't I will serve a local wine, otherwise a wine with a strong local antecedence.
While this experience is built around pre-planned menu's and these to large extent come down to seasonal produce, it's perfectly possible replace one dish/ ingredients to allow for tastes/dietary issues. Start times may also be adjusted to suit guests schedules.

Food allergies can for the most part be addressed. This activity is run from a private house so may not suit disabled guests. contact me for details. I default this experience to 4 guests though I will entertain larger groups.

Jeremy has a passionate for art, history, and food. He took us through the market where he was a wealth of information on Cork history, local farming, and food culture. At his flat we shared warm and enjoyable conversation on a variety of topics while he prepared an updated version of traditional Irish fare. The 5 course meal included Irish soda bread, potato soup, bacon & cabbage (sans nasty cooked cabbage smell - don't worry, he will share his secret), local cheeses, and apple cake with cream. All made while we watched (we preferred to let him do the cooking while we did the watching). Jeremy was kind enough to provide the recipes for us to take home so we were not distracted by taking notes. This was a far more personable experience then simple taking a cooking class somewhere. We highly highly suggest it. Jeremy is so engaging and so much fun. There is no possible way you would be disappointed. We would do this a 2nd time and ask him to teach us how to cook something else.

The tour in the English Market was very informative. Jeremy was really talkative and gave us lots of insight in the history of the English Market and Cork. We were actually expecting to buy all ingredients in the English Market, but we only bought cheese. The cooking event was nice. We would have loved if we had been a little bit more involved in the cooking itself. Dinner and wine were very delicious.

Jeremy offers a great experience combining a tour of the wonderful English markets with a cooking class on traditional Irish dishes in his own kitchen. En route, he shared his expert knowledge of the city’s history and architecture - and then the mouth watering experience of learning how to cook four delicious dishes - then eating them!
