A tour of the uniquely designed smokehouse is inspired to look like a traditional Scottish building called a cleit. A peat roof and stonewalled buildings from the bygone years. (Search on google St. Kilda and Cleit).
Learn how the local alder wood is prepared by hand using an axe and used to fire the smokehouse and to create the smoke. I will talk about the various techniques of hot and cold smoking, wet and dry curing.
Smell the secret 6 spice mix blend used in the current recipe to cure the salmon. Can you guess any of the spices?
Finally the best bit tasting, Sample 5 different canapes.
A twist on a Cullen Skink, Smoked salmon mousse on beetroot and blini, two additional tasting spoons.

The award-winning, Isle of Skye Smokehouse was launched in 2017 by John Corfield who’s passion and dedication for excellence was forged from his time working as a Chef at the Ritz Hotel and Gordon Ramsay’s 3 Michelin Star Restaurant in London.

With 10 year's professional cheffing experience and 8 years running Scalpay View B&B the opening of the smokehouse was a logical progression after perfecting the art of hot smoking salmon for his B&B guests. The business is a relatively new startup home business. Already picking up awards for the Alder Hot Smoked Salmon and supplying high-end hotels and restaurants throughout Skye and Lochlash.

You will visit the external workings of the smokehouse and a tour outside the kitchen. Also we will have a talk about the smoking processes. Canapes and drinks in the lounge of our B&B overlooking the sea loch and Isle of Scalpay. Might be outside on good weather days. Look out for the resident otters. Due to strict food hygiene practice, there will be no access inside the kitchen area or smokehouse. Don't worry this won't detract from the tour.

Would highly recommend this experience to anyone. John was a great host. We loved learning all about his story and his process for smoking fish. He is also a great chef and sitting enjoying the smoked fish platter overlooking the bay was spectacular.

Not a big fan of smoked fish but my partner is, so I booked on John’s experience. It was informative and entertaining, and I left thinking I just don’t like supermarket smoked fish! His products were delicious and the tasting spread was top notch.

If you’ve seen the show “Chef’s Table” then you will love this experience, it’s like watching an episode first hand. For us it was the quintessential AirBnB experience: authentic, compelling, and offers something you won’t find anywhere else. You are given a chance to see the detailed work, creativity and passion behind food you may have overlooked in the past. And then you get to taste it! We really enjoyed this experience. John, the host, studied under Michelin ranked chefs, where he learned the art of mastery, which he now applies to smoking salmon, and you can see his focus and commitment. We really appreciated hearing about his journey, and the food he prepares speaks for itself. Agreed with others that this is a must-do while visiting Skye!

John's smokehouse and tasting tour was phenomenal. It was simply eye-opening to see the craft behind the smoking and almost witness the history of how it came about. Rounding up the tour, the tasting platter and accompanying tea was top class. No spoilers here for everyone going on the tour, so you'll have to try it! Highly recommend, incredible value, very unique and best smoked salmon I've ever had.

I do not have the correct, or proper vocabulary to place in words how beyond incredible this experience is. Extraordinary, superb, incredible seem insufficient in definition. John trained with some of the top Michelin chefs in the world. He is in artisan honing his craft in the raw element. John takes you through his passion, dreams, experience, training and knowledge he has gained as he pursues his passionate craft. He will walk you through the details of how he pursued his dream why you are now sitting on a beautiful site overlooking from Skye the continued natural tapestry Skye offers and take you through his process start to finish and serve you freshly prepared art 5 Star smoked salmon dishes, with paired tea that to me was at the level of a required jacket Michelin Restaurant. Honestly, I struggle to express how phenomenal the experience was and how much I want to share it with friends and family. John is one of those individuals you can tell will become a legend of his craft - and the opportunity to experience this is like experiencing a Gordon Ramsey level dining and learning experience before he made mainstream. Beyond value, its once in a lifetime opportunity and experience - if you are traveling to Skye on Holiday bring friends and family book as many as you can.

A truly fantastic immersion experience. My husband and I work in the food industry in The States and my husband is a butcher. I booked this experience for him but I was really impressed by the knowledge and stories John shared with us. The location and view were enchanting and the tasting was superb from beginning to end. Flavors and presentation were so impressive and I loved the smoked tea! Thank you John for such a memorable experience!
