A tour of the uniquely designed smokehouse is inspired to look like a traditional Scottish building called a cleit. A peat roof and stonewalled buildings from the bygone years. (Search on google St. Kilda and Cleit).
Learn how the local alder wood is prepared by hand using an axe and used to fire the smokehouse and to create the smoke. I will talk about the various techniques of hot and cold smoking, wet and dry curing.
Smell the secret 6 spice mix blend used in the current recipe to cure the salmon. Can you guess any of the spices?
Finally the best bit tasting, Sample 4 different canapes.
A twist on a Cullen Skink, Smoked salmon mousse on beetroot and blini, two additional tasting spoons.

The award-winning, Isle of Skye Smokehouse was launched in 2017 by John Corfield who’s passion and dedication for excellence was forged from his time working as a Chef at the Ritz Hotel and Gordon Ramsay’s 3 Michelin Star Restaurant in London.

With 10 year's professional cheffing experience and 8 years running Scalpay View B&B the opening of the smokehouse was a logical progression after perfecting the art of hot smoking salmon for his B&B guests. The business is a relatively new startup home business. Already picking up awards for the Alder Hot Smoked Salmon and supplying high-end hotels and restaurants throughout Skye and Lochlash.

You will visit the external workings of the smokehouse and a tour outside the kitchen. Also we will have a talk about the smoking processes. Canapes and drinks in the lounge of our B&B overlooking the sea loch and Isle of Scalpay. Might be outside on good weather days. Look out for the resident otters. Due to strict food hygiene practice, there will be no access inside the kitchen area or smokehouse. Don't worry this won't detract from the tour.

Great couple of hours , the storytelling , seeing how the salmon is done & food tasting was fabulous . Remember your midge repellent though

Really interesting history and process of smoked salmon John was passionate about his work that was clear to see, the food we had was amazing Would recommend I look forward to trying the salmon when I get home!

This experience came up as I had booked on Airbnb. I tend to look between here and other sites for places to stay. I’m glad I had booked a stay as I doubt we would have seen it to hook otherwise. I’m definitely going to be more aware of the experiences options in future. John’s tour was great and completely unique and it’s clear he is passionate about what he does. It was interesting to hear about how he got to where he is now and the food was delicious. Hearing and seeing how he sources, prepares and smokes the fish was a complete eye opener. Would highly recommend to anyone visiting Skye that wants to do something a little different.

5* views, food and tour. John is clearly passionate about what he does and the product he produces. A must do for foodies when visiting Skye! Very easy to find as it is on one of the main routes on the island.

This was a great experience - beautiful views over the loch, great storytelling and explanations from John and the food at the end was divine!
