Bring home the tastiest of souvenirs: the technique for making buttery croissants, something that not even many French people have mastered! It is surely one of the most technical dough in French pâtisserie.
ONLY 6 PERSONS PER CLASS! ONE DOUGH PER PERSON = 8 BREAKFAST PASTRIES EACH!
After 3 hours spent with our chef, you will have acquired the know-how to make croissants that are light, crispy on the outside and melt-in-your-mouth soft on the inside. You’ll learn and perform each step in making classic butter croissants and croissants with almonds, but you’ll also learn how to make pain au chocolat (chocolate-filled croissants), pain aux raisins (raisin croissants) with pastry cream, and other variations on the croissant that are as delicious as they are unexpected.
Techniques:
Détrempe: mixture of flour, water, salt, butter, yeast, used in the preparation of croissant.
Beurrage: to add butter to the dough that is called « pâton ».
Paton: the block of croissant dough after the butter has been folded into the detrempe to form an envelope.
Tourer: to give turns to the croissant dough (pâton) by rolling the dough and folding it.
Abaisser ( to roll out): to roll out a sheet of pastry dough to the desire thickness with a rolling pin, before shapping it.

Our chefs, Séverine & Julie are real bonbon. Their love of the art of pastry-making is one of their best qualities, one that has been enriched and developed through years of experience. Both are graduated from the International Culinary School Le cordon Bleu and from the France’s oldest hotel and restaurant training school, CFA Médéric.

French but open to new horizons, our chefs have spent several years abroad. This experience instilled in them the joy of sharing with other cultures, contributing a great openness of spirit and empathy for the excitement of voyagers in search of discoveries.

Our workshop is located few steps away from Montmartre. We’ve arranged the studio layout to provide you with a large, pleasant, comfortable space. Our kitchen is equipped with all the necessary materials so that each participant can work under the best conditions, without having to wait in line or take turns. The Rochechouart quarter has a commercial side as well as a leisure side so you can enjoy the Parisian mood stroll along after the class.

This class is held in a spacious classroom type kitchen. Though you complete the class with croissants and pan au chocolate to take home, it is impossible (with dough rising times) to complete in 3 hours. As such, you start the process, jump forward (with pre-made dough), and then go backwards again. You complete all steps, but not in order, which can be a little confusing if you want to repeat it at home. Nevertheless they give you a recipe at the end that explains everything. Gail, our instructor, was a very knowledgeable expert in croissant-making and helped emphasize keeping each step perfect in order to ensure a good finished product. Overall, I am really glad I did this as I'll take this knowledge home and make croissants!!

I left with a better appreciation of how difficult and time consuming making croissants can be. But they are oh so delicious. She was a wonderful teacher, patient and kind willing to share her craft with us. Overall a wonderful experience. I Highly recommend this treat for trip to Paris!

Very clean baking space and accurate baking instructions made for a fun morning. We were 4 friends taking the class. We made 2 different types of croissants I’d def take this class again

Look no further if you want a great class on how to make croissants and other related goods. Julie was our teacher and she has a world-class background and was born in Paris. The class was zero stress, all fun and extremely informative. I enjoy baking but had never made that kind of pastry before. She showed us the steps and explained why we did what we did. That will help when I go home and bake for my friends. She also said I could email her if I have any questions when I try on my own. We were given the recipes to take home too. Oh, and not to mention we are taking home all our yummies too. The class is six people so you get all the help and attention as needed. I have no complaints. It was great!

Take this class! The croissants were delicious and I felt like I truly learned how to do it on my own (but also croissant baking takes a lot of time!) Loved our instructor Gail! She is clearly a pro and made the class fun and engaging!
