Cooking is fun. In my class you will learn how to prepare a full meal in a short time, learning tips that come from my trips around the world. The difference in the pan is the technique: fried, sauté, steamed, and much more is what makes the difference in the final result. You will receive all the recipes written and you will be able to take notes. Here is an example of menu for the class: Mexico in the kitchen, Scallops in aguachile - the Mexican carpaccio -, Gratin clams - with the wonderful clams chocolata from La Paz bay -, green raw sauce, red boiled sauce, pico de gallo sauce - sauce is everything in Mexican cuisine, here is a good example of ingredients and techniques, Aztec soup or tortilla soup - one of my favoured-, Flambé shrimp with tequila and guajillo chile- this is a recipe from my restaurant in San Miguel Allende: we were very famous for these- , Red enchiladas- classic and soo good -, Buñuelos with fresh organic strawberries- this is my invention: a light dessert with the strawberries from our local farmers. If you have some special requests as gluten free, vegetarian, or others, just let me know and I will adapt the class to your needs.
I have being a traveler all my life and when I travel to a country my first interest is going to the market. The products you find in a market tell you everything about the people of a country and as an historian of food and a master chef all my researches start observing people foods and sampling everything. I had a restaurant for 18 years in Mexico and have being teaching cooking in universities all over the country. In my kitchen you will learn how to cook with different techniques a cuisine easy to reproduce at home with the ingredients you will find anywhere.

The House of the Birds - La Casa de las Aves - is a home in a big garden visited by 11 species of birds among which you can see humming birds, cenzontle and many more. The atmosphere of the class is very relaxed: food is fun and my idea is cooking and learning having a good time! We will prepare a whole menu, appetizer, main course, dessert accompanied with a good wine. Every participant receives a copy of the recipes to take home with his notes.
