We like to think of this experience as a "historical edible journey". We will begin by sharing the way in which the indigenous Mesoamericans related to cacao (cocoa). The taste of their traditional drink, their uses and customs. We will taste roasted, raw and praline cacao beans. During the colonization of America, cacao and chocolate experienced new flavors as they mixed with the European culture. We will sample each step of the process until we get to the chocolate we know today. There is a hand tempering live demonstration and we will discuss the science behind contemporary chocolate, as we will show you the crystals in untempered chocolate. The end of our journey comes with our desire to experiment with new flavors. We are hunters of local, fresh, tropical and organic flavors. This in an invitation to a culinary adventure. To discover new flavor combinations with our carefully hand craft craft organic chocolate.

Carolina & Jenny

We are two urban chocolatiers, loving every minute of research and experimentation. Our culinary experience is wide, we are two passionate artists with a love for food. Jenny had the opportunity of being thought by a local french pastry chef and worked for important local handcraft french restaurants and patisseries while Carolina has being reading all food related articles and books ever since she was a child. Both food designers for local festivals as Bon Art Petit and Private Exhibitions. A few years ago Cacao & Chocolate became our passion and focus. Our chocolate is handcrafted, we operate a bean to bar chocolate lab using organic award-winning cacao beans from Costa Rica and look for the best local organic ingredients as pairings for our chocolate. We both believe food is a wonderful vehicle to learn about culture and history.
