We will make handmade fresh pasta and all the other dishes from scratch in a warm and professional real kitchen.
It's not a demonstration, it's a real hands-on class of 3 or more hours where you will make and understand all the steps, guided by my 15-years experience in teaching.
Handmade pasta is made using only the rolling pin (never talk with me about machines!) and it is a real art, maybe not immediate but challenging and you will be really proud of your work.
At the end of the class you will have learned all the tricks of the local chefs so, when back home, you can astonish your friends with your amazing cooking.
You can choose all the dishes we will make so PLEASE CONTACT ME BEFORE BOOKING in order to decide together what we are going to prepare.
We can make tagliatelle with ragù (bolognese sauce, that has to cook slowly for hours...), tortellini, tortelloni with ricotta, ravioli, lasagne, starters, second courses and desserts.
For a single guest it will not be possible to make 2 kinds of pasta due to technical times.
After our 3 hours class we will have lunch together!

The class starts around 10am and goes on about 3 hours, then we will have lunch with what we prepared, with a glass of wine.

I am the founder of Bologna Gourmet and I give cooking classes since 2004.
I have a certifcate in handmade pasta because here it's a serious thing, we are the main experts in Italy!
My specialty is obviously handmade pasta and local food, we can make tagliatelle, tortelloni, tortellini, lasagne, ravioli and so on... During the class we will make all the traditional dishes of our beautiful city.
I am a great expert of all the typical products of our region: Parma ham, mortadella (Bologna), Parmigiano Reggiano and Traditional balsamic vinegar and I can tell you everything about them!
I can also plan special trips to visit the producers along the region.

On request, before the class we can have a market tour to learn everything about local typical products and make good shopping.

Ilaria’s cooking class experience was everything I had hoped for! Before the class, Ilaria emailed me and we talked about what I wanted to learn and decided on a menu. Then my adult child and I went or her professional kitchen which was spacious and very comfortable. Just ended up being the two of us but there was plenty to do the entire time for both of us. We learned about how to make two types of pasta, and made the famous Bolognese ragu and even another sauce for the ravioli that she had ingredients for. She was very patient and very personable. And she was very clear about what we should and should not do while making traditional Bolognese dishes like a teacher should. If we ever go back we’ll be sure to sign up again for more advanced work, lol. It may seem pricey, but it is unforgettable and a real chance to meet and learn from a local.

Fantastic time! It really makes all the difference to have someone like Ilaria show your around the city then teach you how to make fresh pasta. So many important little techniques that can only be learned in a hands in lesson!

Our lesson with Ilaria was one of the highlights of our week in Italy. We make fresh pasta often at home, and thought we were pretty good at it, but this experience flipped everything we knew on it’s head. The pasta we made with Ilaria was vastly better than anything we’ve made before, and we left with the knowledge we need to repeat it at home. Ilaria is a fantastic teacher- knowledgeable, patient, and so friendly. We also did the market tour before the class. It was great to walk through the shops with someone who could explain everything about every product on the shelves. We highly recommend Ilaria’s class to anyone who wants to learn to make pasta from an expert!

Ilaria ci ha insegnato l’antica arte della chiusura dei tortellini e della stesura della pasta a mano. Abbiamo anche fatto il ripieno e il ragù bolognese secondo ricette depositate. Imparare di persona da una vera professionista è un’esperienza impagabile che nessun corso online potrà mai darti. Grazie Ilaria!
