I’m deeply connected to my roots. My grandpa was a producer of Parmigiano Reggiano and Balsamic Vinegar so as a child I could learn all the secrets of this food. I love conveying my knowledge to people from other countries, which I try to share the culture and traditions of my homeland with.

Even today these traditions are perfectly preserved and practiced with passion.
Reggio E. it can be reached from Florence-Milan-Bologna, with the high speed train in 50 minute, or other cities with the normal train.

We elected to continue our afternoon with Claudio by booking the balsamic vinegar tour to immediately follow. The transition was natural and we were so glad we ended our day with this experience! We learned so much on both the Parmigiano Reggiano tour and the balsamic vinegar tour. It felt very personal and Claudio continued to be the perfect guide. Will highly recommend to everyone I know!

We did this experience right after the Parmigiano Reggiano experience and it was a great add-on. The balsamic was delicious and it was great to learn about the different quality certifications, how it’s made, and do a tasting. The setting is breathtaking — nestled in the hills with incredible views. This is a perfect compliment to Claudio’s other experience and I recommend making a day out of it.

Another fantastic experience by the passionate and impressive host Claudio! We got to have an intimate look at the family’s acetaia filled the wonderful aroma of basalmic vinegar and barrels that are hundreds of years old. We got to see, smell, and taste the differences between the different vintages and even enjoy some with ice cream. Lovely way to learn about this Italian staple!

A great follow-up to Claudio's tour of the secrets of Parmigiano-Reggiano! His cousin's acetaia where the balsamic is made is a truly special location. It is full of history and hundred year-old barrels - and of course a ton of delicious balsamic. Learning about the process of making balsamic was very interesting - as was getting to smell how the powerful scent changes as it ages! The finished products we got to sample at the end were like nothing we've ever tasted, and the balsamic we brought home with us is one of our most treasured tokens of our time in Italy. Highly recommended!
