The class will start with the history and theory of taking the small cocoa-nut which we'll feel and smell (tastes awful), to the eventual finished sensational chocolate bar. I will outline the theory of taking the chocolate through the process of heating, tempering, molding and how to work with the hot chocolate in different forms, molds and free form. Chocolatiers understand the crystal form and other elements leading to the eventually finished chocolate. The introduction will leave us all aware of how special chocolate is and how dealing with it correctly prevents that waxy taste and discolored finished product. We are about to make beautiful chocolate! Most of our time is spent preparing the chocolate and making dark bark - a sheet of chocolate layered with roasted almond nuts, or pistachios or plain (for those allergic to nuts). The sheet is then cooled and broken into irregular shapes. Get it right and the bark will be scrumptious. With the new knowledge of making finished chocolate, we realize how important that each chocolate maker tests the tastes of different chocolates, and decides a preference that the maker loves and will more than likely always use. The class will be in pairs or small groups and will eventually go home and show off their wonderful chocolate bark. You'll learn an awful lot and the class is fun! I supply all the chocolate, pans, dishes, tools, etc

I am a chocolatier. I love chocolate. I love making chocolate. I know how to make fabulous chocolate and understand how important it is to get it right every time. On www.JoshuaTreeChocolate.com you will see how varied the chocolate items are - from bars to gianduja truffles, dark chocolate salami and dark chocolate snakes. I airbrush, paint and am always experimenting with new tastes. Making chocolate is an art but it's crucial to understand the process of making a beautiful product. The class will lead you through this understanding of tempering, heating the chocolate to the final product. The class is fun, it's hands-on making chocolate and you will leave with almond, pistachio or plain dark bark. My greatest thrill is when people pass me in the street and let me know how amazing my chocolate is and how they "can't wait' for more.

The class will be held in a commercial fully fitted kitchen in Joshua Tree. Learn to understand the difference between working in this kitchen and a home kitchen from preparing to washing up.
