I want to bring you into an authentic local food experience, teaching you how to make some different kinds of sardinian fresh pasta, like ravioli (filled with ricotta and spinach) and malloreddus (small sardinian gnocchetti). Especially, i'm going to focuse the class to the recipes of south Sardinia, the area close to Cagliari, my native city, talking about the ingredients, our history and food culture. We won't learn only to make pasta because we will prepare also some traditional sauces to combine it, like a delicious sausage ragù and a simple (but not easy!) tomato sauce or something else according to the season. Then, we will have a small appetizer composed of a selection of sardinian cheeses, cured meats, olives and vegetables preserved in oil, and last but not least, we will finally taste the result of our work, pairing everything with some glasses of natural local wine. My house will be open to my friends, so it could happen to meet locals and to be seated all together around our table.
First of all i consider myself a foodie and a wine lover; i love cooking, to share recipes and even to discover new product and producers. I believe food is not only nutriment, it's also culture and conviviality, a good way to stay together with people. I was a lawyer and some years agò i left the legal profession to dedicate my self to the gastronomic world. I attended several cooking and wine classes, included a professional cooking academy in 2016 and i currently work in restaurants, wine shop or as a professional free lance cook.
