Choux Pastry dough will have no more secrets for you !
You will be surprised when you realize how simple it is, you just need to respect some rules and afterwards the filling and shaping become endless possibilities !
Step by step, you will learn how to make it on your own, from the choux pastry dough: the 'panade', the sweet cream puff and the 'craquelin' on the top.
I will explain the recipe in details, take time to show you and explain the different steps but in the end, you will be the one who bakes ! This is why I prefer having small groups, to feel relaxed and having fun (maximum 4 people).
At the end of the workshop, we will have a tea/coffee together to taste my little 'choux', and you will leave with yours, in a box... and a little surprise!

I used to work for 10 years in the chocolate retail family business "Les Petites Chocolatières", dealing with new products and marketing. I spent an amazing decade in the chocolate world.
But I finally followed my childhood dream and went back to school to learn Pastry in the prestigious gastronomic school FERRANDI in Paris.
I got my diploma in Pastry and now I love to teach my guests the professional technics to cook iconic french pastries in a fun and relaxed atmosphere !
The pastry workshop will take place in my loft in Boulogne Billancourt , with a rooftop.

I will conduct the workshop in my loft in Boulogne Billancourt, a few steps from the metro station, Bus station or RER, near The 'Parc des Princes' football stadium. My loft is very shiny and we can enjoy a drink and a pastry on the terrace after the workshop.

Taking a class with Julie was absolutely the highlight of our trip to Paris, her studio is absolutely stunning and her knowledge on pastries is incredible! I really appreciated getting to know Julie who not only taught us how to cook pastries but also taught us about Paris!

Julie was very friendly and welcoming. The studio is very clean. She was very organised and we got to cooking almost immediately. We had lots to do so we didn’t feel left out. This is the finished product was delicious and we left with lots too. We really enjoyed ourselves, thank you Julie!

I signed up the night before (after first checking with her and make sure it wasn’t too short a notice). I had initially hesitated as I was hoping for an experience in French and her languages listed were only English and Spanish, but, not surprisingly as she lives in Paris after all, she is French. So I got a private lesson in choux making in French! It was a great experience. Julie is very knowledgeable and very hospitable. I felt at ease immediately. Her atelier is in le Marais, very clean and very nice little place. I’ve done a fair amount of baking and French pâtisserie before but had never attempted les choux. Loved making them and got to take a lot home on top of it. We chatted a lot while we had to wait for the baking. She made some refs for restaurants and markets as well as places to buy baking supplies that would be harder to find in regular markets. I highly recommend Julie and her choux class! This summer when I come back with my kiddo will try and do a mom and kid class.

I loved Julie’s class. Because of the French strikes we needed to rearrange the time, but as a result, I had my own private class. The class is held in a modern suite, but be aware that it is up two flights on a circular staircase. Julie gave excellent advise and tips on how to make your choux turn out perfectly, and can’t wait to go back to Paris for another experience. So much fun!

It was a rainy day in Paris so we were looking for a unique experience and came across Julies Choux pastry workshop. It was a perfect few hours. Her workshop is amazing and immediately welcoming. Julie was the perfect host and teacher who made the whole experience so fun. We learned a lot and came home with far too many Choux buns that tasted far too good! I would recommend this a thousand times over to anyone looking to learn patisserie and wants to do so with an excellent teacher in a perfect setting.

A really wonderful rainy afternoon spent in Julie’s amazing culinary space - even if you don’t usually like baking you will enjoy spending time there and feeling Parisian making patisserie with lovely street views. Julie had lots of knowledge and we learnt a lot! Would love to come back to try to learn the chocolate tart recipes!
