You will start your journey at the Rastelli Dairy, a small cheese producer run by a family located high in the hills overlooking the town of Tramonti in the province of Salerno. This area was called "Monti Lattari " by the Romans and the tradition of raising cows and producing cheese is an age-old tradition. With the milk of their own cows, they produce various types of cheese daily, both fresh and seasoned. You will meet the cows that the owner Mario, milks every morning. You will see the work that goes into the creation of mozzarella, and try your hand at it. Then, you will taste the their products served directly on the spot. Then you will move more in the valley, about 6 km away, to the San Francisco Inn. In this rustic setting you will meet the owners Franco, the master pizza maker of the slow food alliance , and his wife Pamela Viggiano , the Chef. Here you will consume an appetizer with local vegetables and salami. The next course will be pasta prepared with seasonal produce, and then a handmade dessert. We'll also introduce you to perfectly paired craft beers and chestnuts .

Hello, my name is Mario and I want to share the magic of Italy with you. I have helped travelers to the area get to know the little known secrets of our region for years with my business, the Tramonti Experience. One place that helps me to do that are the owners of Rastelli Dairy, with the milk of their own cows, produce various types of cheese daily, both fresh and seasoned. The dairy is part of the 'Campagna Amica' chain promoted by Coldiretti. I also frequently partner with to create culinary fun is Francesco Maiorano, the patron and pizza chef at Trattoria San Francisco. A specialty pizza maker who is part of the Sloow Food Alliance, and a Master Pizzaiolo of the Traditional Pizza of Tramonti. Together with his wife, the Traditional Chef Pamela Viggiano, you will be welcome into their pub and shown the world of good pizza. Their belief is to focus everything on quality ingredients, which makes for great pizza!

It starts with a visit to the dairy of the Rastelli family, in the upper and panoramic part of the Lattari Mountains. We will then continue to the "San Francisco" tavern, a small and rustic family-run restaurant, located about 6 km away (10 minutes by car).
