Udon are thick Japanese noodles made of wheat flour and have been part of Japanese cuisine for at least 750 years (a much longer tradition than Japanese Ramen). Udon noodles are hearty with a firm bite and soft texture and are a very popular dish in Japan. In this hands-on class you will learn to make udon noodles from scratch, using techniques that have been used for generations. Japanese home cooks actually knead udon dough with their feet due to the toughness of the dough. (Please be assured that this is a very hygienic process as we will be using sealed bags to knead the dough with!) I will teach you how to make a classic udon broth (dashi) from scratch (this is traditionally made with fish stock but a vegan option is also available). You can choose between two classic udon toppings: either beef udon or kitsune (sweet fried tofu, very tasty!) udon (vegan option). Please let me know if you prefer beef or kitsune (vegan) at the time of booking. Please note: Because traditional udon noodles are made with wheat flour, this experience is not suitable for people who have glutton intolerance. I was awarded the Bay Area "Quality Champion" award by Airbnb for receiving the highest quality scores on my cooking classes. My goal is to provide you with the best possible experience where you learn new skills and have fun!

I was born and raised in southern rural Japan and have been passionate about cooking from a very young age. I learned how to cook from my grandmother who taught me traditional Japanese home cooking. With this experience, I will teach you how to make traditional udon noodles from scratch which you will prepare with your own two hands. We will eat what we prepare with green tea.
